Bourbon Naranja is a natural mutation of the Bourbon variety, named for the orange color its cherries take on at peak ripeness. In this lot, producer Juan David Puerta at Finca La Sirena develops the coffee through a honey process that retains 75% of the mucilage during drying. This honey style, closer to black honey, allows the fruit's natural sugars deeper interaction with the seed, producing an enveloping cup with silky texture, ripe fruit, and a long, sweet finish that highlights the variety's distinctive character.
Yellow fruits, flowers, and spices. Bright peach acidity. Creamy mouthfeel with a persistent finish of caramel and lemongrass.
Pour-over recommended at 192°F. Weigh your beans. Take your time.
