Bourbon Rojo is a descendant of the Bourbon line that spread from Réunion Island to producing regions around the world. It's known for a deeply sweet, creamy cup with bright acidity and notes of vanilla, chocolate, caramel, and red fruit. In this edition, producer Juan David Puerta at Finca La Sirena uses an osmotic dehydration process with watermelon — a technique that draws out the coffee's natural fruit character through a co-fermentation logic.
