Maragogipe is a natural giant-bean mutation of Typica, prized for its soft, elegant cup and unusually large beans. This lot is a peaberry selection — the rare round bean that forms when a cherry develops just one seed instead of two — from producer Noé Salazar at Finca Buenos Aires in Génova, Quindío, at 1,800 meters. A honey process leaves the mucilage on during drying, adding body and deepening the variety's natural sweetness.
Vanilla flower, nuts, and oat. Malic, juicy green apple acidity. Silky mouthfeel with a persistent finish of hazelnut cream, cinnamon, and lemongrass.
Pour-over recommended at 192°F. Weigh your beans. Take your time.
